Tried it. Works. Tastes great. Had the original Portuguese ones before too. Similar yet very different. Both are yummy, but this one I can make in less than 30 minutes without much fuss and my four boys love it. Just for that it is an absolute winner! Thanks Jamie!

It`s funny that when I went to China 5 years ago I found Pastéis de Nata being sold at the street. I had to try one. I must say the taste was completely different (of course) but the look was closer than the ones Jamie Oliver made! And I believe (by looking at what he`s using to make them) that the ones on the streets of Shangai were even closer to the original (taste-wise) than this ones! Sure these ones look also tasty as a regular desert, but don`t compare to the real deal, those are unique (that`s why the original recipe is secret and stored at a vault)!

Jamie, baby, there you go again. They look great, and probably taste great, but they're not portuguese custard tarts (pastéis de nata/natas). They're your custard tarts. No créme fraiche, no caramel, no cinnamon in the pastry, and certainly not one egg only. And after that caramel hardens... who can eat them? Want to make it simple? Puff pastry in the forms, make a custard like what you would do for a créme brulé, put it in the forms and in the oven for half an hour. THEN sprinkle with cinnamon. Enjoy.
An authentic Portuguese Tart is a lot more work, I tried the traditional way once and it was more work but worth it. This way produces something similar and tasty too, just quicker and easier for those of us who do not have the time or do not have enough eggs etc.

The video clearly indicates it is Jamie’s QUICK version of the pasteis de nata ... it does not mean it is the original, true recipe ... just an adaptation. Personally , I find that anything that is quick and cuts corners gives in the end an average product. However, for some people following a recipe that is complex, will not incite the person to try to cook especially newcomers. So this could be a start ... 🙂
Wrong ingredients and a completly wrong way do Custard Tarts. The real portuguese custard tart is made with pastry (the same used to do AppfelStrudel) and the cream should be roasted with the pastry in the oven. This is not a Custart Tart, is just a Jamie´s tart.
Well, I’ve made lots of pasteis da nata the original, long way and, also with store-bought puff pastry. Of course the original version was delicious and looked like it too, (baked in Portuguese standard molds). BUT, I can’t wait to make Jamie’s Quick style with the carmel topping! The time saving is the key… when so much else in life demands your attention!

Whatever, they look good Could you use yogurt instead of creme fraiche? i still don't even know if you can get creme fraiche in the US EDIT: I used greek yogurt instead of creme fraiche and it worked great. also, apparently we don't have puff pastry here -_- I ended up using normal premade pie crust. it was still good, but the puff pastry looks way better and easier to manage. on the bright side, since the crust came in a two-pack, i ended up with 12 instead of 6! my folks loved it too.

We don´t mix cinamon with the pastry. We don´t use creme fraiche because it doesn´t exist in Portugal. We don´t bake the pastry before putting in the custard. We don´t use orange in this receipt. First you have to take a trip to Portugal and learn how to do "pastéis de nata" and than maybe you can try to teach others how to do it.
Glenn Karlsen if these are supposed to be served as the original then eating them warm is the best! putting them in the fridge might ruin the creamy inside a bit, then again these tarts are completly different from the actual portuguese egg tart so I'm not sure if placing them in the fridge will be bad for them too
The point of Jamie Oliver's program is that he takes popular recipes and simplifies them so they take less time and people watching are more likely to actually cook something new. The 'authentic' recipe for pasteis de nata is more complex and takes a lot longer, so a lot of people don't have the time or simply can't do it. It might be a bit cheeky to call them Portuguese tarts, but it's just a way to get people interested in cooking. If you want a perfect recipe go to another channel and get ready to spend triple the time cooking.

Does one use the same amount of vanilla extract as vanilla paste? I mean, if the recipe calls for 1 teaspoon of extract, can you then replace it with 1 teaspoon of paste? Vanilla paste looks thick.
You would speak otherwise after you actually tasted a real "Pastel de Nata" freshly baked.... What Jamie did is actually miles away from a real one....
Creme fraiche gives it a lighter texture and cleaner flavour which works well with the strong flavours from the orange and vanilla. We haven't tested this particular recipe with cream as a direct swap. Maybe give it a go with lightly whipped double/ heavy cream and let us know what you think. Thanks!
They aren't "known all over the world". No one really knows anything about the Portuguese cuisine outside Portugal, so Jamie has kinda put this dessert on the map.

Discussion of "authenticity" aside, these tarts are an AMAZING hack dessert that I've been doing and adapting for years, and will be for years to come. I mostly use it as a ratio guideline and then go to town. One sheet of puff pastry, two eggs, two things of creme fraiche and two table spoons of sugar makes twelve tarts. That's the base. If you remember that, the world is your creme tart. Dust your puff pastry with whatever... cinnamon, cocoa, pistachios, matcha, cardamom, pumpkin spice. Substitute a cup of creme fraiche with the same amount of cream cheese or quark. Or a cup of pumpkin for the creme fraiche, or a cup of mango puree, or sweet potato. Stir in a teaspoon of some nice jam - cherry, or strawberry, or apricot, or cassis. Maybe some elderflower sirup or maple substituted for half the sugar (note: never all, or it gets too liquidy). Drop some raisins into the custard, or cranberries, or chocolate chips, or walnuts, or peach cubes. Top with caramel, or molten chocolate - or don't. Whatever cheesecake adjacent dessert you crave, here's the way to have it in your mouth in about 30 minutes tops with minimal effort and minimal cleanup. That's the magic of this recipe. Impress your friends, and make your enemies envy you with this one, easy-ass base recipe you can whip up at any time.

I think an important part of being a chef is taking an already known recipe and adding your own taste and look to it but still keeping the originality of it. If it was exactly like these portugese tarts everyone is talking about it wouldnt be very unique to him since hes not portugese so dont get to hasty over the fact its not perfectly done like in portugal

Pastel de nata is hard to make and you need to roll and cut the long dough. Than you mold.
Creme fraiche recipe
1 cup heavy cream/whipping cream
2 tbsp buttermilk
Cover and let sit for 12 hours at room temp. Keeps for two weeks in fridge

We don´t mix cinamon with the pastry. We don´t use creme fraiche because it doesn´t exist in Portugal. We don´t bake the pastry before putting in the custard. We don´t use orange in this receipt. First you have to take a trip to Portugal and learn how to do "pastéis de nata" and than maybe you can try to teach others how to do it.

Glenn Karlsen if these are supposed to be served as the original then eating them warm is the best! putting them in the fridge might ruin the creamy inside a bit, then again these tarts are completly different from the actual portuguese egg tart so I'm not sure if placing them in the fridge will be bad for them too

The point of Jamie Oliver's program is that he takes popular recipes and simplifies them so they take less time and people watching are more likely to actually cook something new. The 'authentic' recipe for pasteis de nata is more complex and takes a lot longer, so a lot of people don't have the time or simply can't do it. It might be a bit cheeky to call them Portuguese tarts, but it's just a way to get people interested in cooking. If you want a perfect recipe go to another channel and get ready to spend triple the time cooking.

Does one use the same amount of vanilla extract as vanilla paste? I mean, if the recipe calls for 1 teaspoon of extract, can you then replace it with 1 teaspoon of paste? Vanilla paste looks thick.

Can you use cream instead of creme fraiche?
Creme fraiche gives it a lighter texture and cleaner flavour which works well with the strong flavours from the orange and vanilla. We haven't tested this particular recipe with cream as a direct swap.
Maybe give it a go with lightly whipped double/ heavy cream and let us know what you think. Thanks!

Discussion of "authenticity" aside, these tarts are an AMAZING hack dessert that I've been doing and adapting for years, and will be for years to come. I mostly use it as a ratio guideline and then go to town. One sheet of puff pastry, two eggs, two things of creme fraiche and two table spoons of sugar makes twelve tarts. That's the base. If you remember that, the world is your creme tart. Dust your puff pastry with whatever... cinnamon, cocoa, pistachios, matcha, cardamom, pumpkin spice. Substitute a cup of creme fraiche with the same amount of cream cheese or quark. Or a cup of pumpkin for the creme fraiche, or a cup of mango puree, or sweet potato. Stir in a teaspoon of some nice jam - cherry, or strawberry, or apricot, or cassis. Maybe some elderflower sirup or maple substituted for half the sugar (note: never all, or it gets too liquidy). Drop some raisins into the custard, or cranberries, or chocolate chips, or walnuts, or peach cubes. Top with caramel, or molten chocolate - or don't. Whatever cheesecake adjacent dessert you crave, here's the way to have it in your mouth in about 30 minutes tops with minimal effort and minimal cleanup. That's the magic of this recipe. Impress your friends, and make your enemies envy you with this one, easy-ass base recipe you can whip up at any time.

Yeah, it's "puff pastry". If you are portuguese, it's called "Massa Folhada".

I think an important part of being a chef is taking an already known recipe and adding your own taste and look to it but still keeping the originality of it. If it was exactly like these portugese tarts everyone is talking about it wouldnt be very unique to him since hes not portugese so dont get to hasty over the fact its not perfectly done like in portugal
i think it's great that you not only show how to cook, but you actually warn people about how dangerous some techniques are, and how to wash up.
this is the version of jamie of "pasteis de nata" in a fast way to do but isn't like the original recipe he said in the beginning!
