  • Putting a hāngī down in the rain with Tame Iti showing us how he does his. A bit different to how I have done them, but the earthy taste of the kai at the end was absolutely delicious!! And then the tasty hāngī fry up the next day was 👌🏾

      I could not believe when I landed in Hamad International airport in the Middle East, I watched a full documentary featuring Tame Iti. He was cooking and eating. So funny, but comforting because I felt close to home lol

    Aww man, I love the hangi or 'lovo' as we say in fiji. For my family, we normally include a lot of 'palusami' which is taro leave with coconut milk. We live to eat this and any other left over on Boxing Day. Sometimes it is fried like you did or all the meat is fried separately if there is a lot left over.

      J F , preparing a traditional Hangi is a real tough undertaking & many Maori, like myself, cook an Untraditional Hangi in a specially built Cooker, like a Beer keg. Bcoz of fire restrictions, urbanisation, population explosion etcetera , it's easier, less work, only need 1 person to complete, and can be set up in the garage or outside conservatory. The taste is similar to doing a traditional Hangi !

    In the south of Chile we have a strongly similar food called “curanto”, I love it. The video of the hangi was incredible I really wanted to taste it.

    Its very interesting how Tame Iti got his idea of native indians of Canada!. How they stack the rocks in with the wood. I do mine almost similar, but we stack the firewood high in a 50cm deep hole and put the rocks on top of the wood. Its our traditional way from Atiu Kuki Airani! Love your vids bro!

    We put a flat piece of mesh on the stones before the meat, stops it sticking to them, looks bloody good though

    Chur mean vid, I've seen and done a few hangis and this is the first time I've seen the meat straight onto the hot rocks with only cabbage to cover it. To be honest the meat looked dry how long was the cook time? I must say us Nga Puhi in the far north have a slightly different way of exucuting the hangi but good to see other ways from different iwi

    Put some banana stomp pound it down with a sledge hammer and stack a layer in the rock so the meat don’t stuck in Hawaii we do that in our imu or ground oven

    Some guys burn the fire and rocks on some iron roofing and just transfer the rocks into the hole when its ready, no need to clear out the hole of burning wood.....and its easier using tongs to transfer the rocks (cut a branch off a tree and split it in the middle almost to the end) The nicest meat is always those burnt ones off the rock.

    Gee I cheat I light two fires one on the flat next to the hole the fire collapse and the fire in the hole bakes the bottom and sides ..
    I clean out the hole roll the rocks in
    30 seconds walk away.
    Hot Cast iron grills over the rocks
    Then on goes the meat Turkey ,chicken,
    Pork then veg. etc.i coat the potatoes, pumpkin in rice flour .
    Buedy he tino reka.
    Awesome to see Mike I thought the fire wood stack looked different.

    What an awesome hangi, I loved the way you did your hangi Tame it was sweet and simple. I like how you cooked the kai straight on the rocks and then picking off that delicious meat yummmmmmo. I loved watching the leftover fry ups the next day too.... Thats just how we roll. cant wait for the next video bro.... P.S I had to make me a kai so i could watch this vid and eat at the same time. hahahaha
