Nice video. I'm sorry I couldn't understand the language or sub-titles. I grew up on a farm and one uncle worked as a professional butcher. I've tried to learn the cuts of meat, but it's only casual interest. All your cuts looked so random and different. Interesting to me. Those two sows you bought at the end looked like prime meat. No anatomical cutting, no body parts. Fat and filet have the same price. They cut the poultry [bones and everything] in bite size pieces so they can grab them with their chopsticks.

While we in the West are served a full steak, of animal, with a knife and fork, those in the East cut up their food to bite sized pieces... seems a good idea. I don't think there can be a decision as if one is superior to the other. Just two different cultures, something I love discovering, no matter which part of the world it comes from.

I wouldn't even eat pork if not for the fat and skin. Over years of watching people live in places like Alaska, out in the wilds, I've come to realise that the fat is sometimes more valuable than the meat... to just survive the Winters. I don't think nutritionists are the best source of knowledge in places outside their happy little thriving clinics. Patting themselves on the back. My father's favourite sandwiches as a child was cold beef dripping (fat) with salt and pepper. (a proper poor family) Another question, for all the 'fat' they eat... where are all the fat people in those Asian countries? Sugar is much worse and a killer.
