No Bake Tiramisu Cheesecake

  • Okay, so Ive been making some recipes for men ive been going on dates with, this person wanted Cheesecake AND Tiramisu sooo heres a No Bake Tiramisu Cheesecake! There was not a second date, but thats not on me, because I promise this was really good!
    Prep: 10 minutes Total:4hrs (chilling) to overnight
    Ingredients:
    1 ½ -2c chocolate graham crackers or teddy gramhams
    4tbsp unsalted butter, melted and slightly cooled
    3tbsp cold coffee (I used a vanilla cold brew recipe im working on)
    3-4 8oz packages of cream cheese
    1/2c powdered sugar ( I say 1/4c in the video but I wanted it to be a little sweeter)
    2 tsp Vanilla extract
    Pinch of salt
    Filling:
    1c cold coffee
    9-10 Lady finger cookies, broken in half
    1/4c Chocolate or caramel mix in and drizzle (I also have tested this using hazelnut butter to make swirls and OMG)
    1 tbsp Cocoa powder for garnish
    Special equipment: hand mixer and spring form pan
    Line a spring form pan with parchment, set aside until ready for assembly. To a large bowl add the graham crackers and melted butter mix together and press into the bottom of the spring form pan, To a separate large bowl add the 3 tbsp cold coffee, cream cheese, powdered sugar, vanilla, and salt, beat together with the hand mixer until there are no remaininly clumps, divide the mixture in half, add in half of the cream cheese mix to the spring form pan to create a little flood gate, To the 1c of coffee, add some of your lady fingers, to soak up the liquid for about 3-5 seconds then drain most of the coffee, evenly distribute to the spring form pan, add any mixins like chocolate, caramel, hazelnut butter, then use the remaining cheesecake on the top, spread into an even layer. Let cool in the fridge for at least 4 hours, up to over night, when ready to serve use a small mesh strainer to top the cheesecake with cocoa powder, serve and enjoy! Store covered in the fridge for up to 1 week! Enjoy!
