Masha Allah , just seen your video and absolutely mouthwatering delicious - Alhamdhulillah Question 🙋♂️ , do you have to leave it for 2 hours to rise ? and seen a lot of videos after kneading initial dough , they leave to rest and it doubles in size and than they knead again and roll / cut and proof before frying . In Canada where . I love you recipes too. I tried your makate miminina.. It turned out nice, for the firsts, maybe will be better next time. Inshallah will send you a photo, when I do again. Want to try your mandazi next.
No it will rise too much - but you can prepare the dough keep in the fridge and then leave on counter for couple of hours to get to room temperature then roll and cut. Why not fry and freeze, then just put in the oven for few minutes it will be as good as freshly made. Try it out

Yes very important yeast should not be old
If yeast is still good then you can put in the warm oven to rise as cold kitchen takes longer to rise

Aaston it is 1 1/2 cups USA Measuring cup
Now add 1/2cup yoghurt and 1 heaped teaspoon of baking powder to your recipe and try it

When you reheat please don’t heat for too long just for few minutes they will be fresh
