  • Welcome back to a new episode of our "EURO 2024 Culinary Tour: A Taste from Every Nation" series! Today, we're indulging in the rich culinary heritage of Austria with one of its most famous desserts - Sachertorte!
    🌍🇦🇹 Sachertorte is a decadent chocolate cake that has delighted dessert lovers for generations. Join us as we uncover the secrets to making this traditional Austrian treat right in your own kitchen. 🍫🎂✨
    Ingredients:
    • 140g dark chocolate (at least 70% cocoa)
    • 115g unsalted butter, softened
    • 115g sugar
    • 6 large eggs, separated
    • 140g all-purpose flour
    • 85 g of sugar
    Ingredients for filling and frosting:
    • 225g your favorite jam
    • 150 g of dark chocolate
    • 150 ml of liquid cream
    • Optional: whipped cream (for serving)
    STEPS:
    1. Prepare the Chocolate Mixture: Melt the chopped dark chocolate in a heatproof bowl over a pot of simmering water (double boiler). Set aside to cool slightly.
    2. Cream the Butter and Sugar: In a large mixing bowl, cream together the softened butter and granulated sugar until pale and fluffy.
    3. Add Egg Yolks: Gradually add the egg yolks, one at a time, beating well after each addition.
    4. Incorporate Chocolate: Mix in the melted chocolate until well combined.
    5. Fold in Flour: Gently fold in the all-purpose flour until just incorporated.
    6. Beat Egg Whites: In a separate bowl, whip the egg whites until stiff peaks form.
    7. Combine Batter: Gradually fold the whipped egg whites into the chocolate mixture, using a spatula to maintain the lightness of the batter.
    8. Bake: Pour the batter into a greased and lined 9-inch (23cm) round cake tin. Smooth the top.
    9. Bake: Preheat the oven to 180°C (350°F) and bake the Sachertorte for 35-40 minutes, or until a skewer inserted into the center comes out clean.
    10. Cool and Assemble: Allow the cake to cool in the tin for 10 minutes before transferring to a wire rack to cool completely. Once cooled, slice the cake horizontally into two layers.
    11. Assemble with Jam: Spread apricot jam over the bottom layer of the cake. Place the second layer on top and spread the remaining jam over the top and sides of the cake.
    12. Decorate and Serve: Optionally, decorate the top of the cake with a chocolate glaze or simply dust with powdered sugar. Serve slices of Sachertorte with whipped cream, if desired.
