I did add a splash of cooking wine after I sauteed the veggies. It tasted a little bland for my latina pallet, so I also cooked the cilantro with the rest of the ingedients instead of putting it in raw. It really changed the flavor and kicked it up a notch! I added the cilantro right at the end, and only cooked it for the last 5-10 minutes. I will definitely be making this again!
Looks great! I usually add mushrooms to veggie chili. They kind of disappear, but add a "meaty" texture. The idea of blending some of the chili is brilliant. Will definitely try that!
Made this 2 days ago and OMG, it was absolutely delicious!! It was actually better the next day warmed up. My hubby is still amazed I can make that from old cans I had sitting in the cupboard and bell peppers. So simple and easy! I did not add carrots or celery, but doubled up on different color bell peppers and a sweet onion. I'm adding this in our regular rotation of meals. YUM!!
This recipe is my go-to chili recipe..I've been making it for some 2 years now. What I have found is adding a tablespoon of Molasses and a teaspoon of cinnamon really adds to the flavor. I know its July but here in the UK the weather varies from hot to cool within a couple of days. Now in my 70s I am cutting down on my meat consumption so this Chilli seemed like a good option to try. I followed the recipe almost to the letter, Kidney Beans not black, no cilantro but added a cupful of frozen sweetcorn. It all came out exceptionally well and very tasty. My family enjoyed it also and I will make it again. A couple of observations though. Research shows that eating beans and legumes several times a week is greatly beneficial to gut health and your health overall. Shopping in my local food store I noticed one of their new vegetarian ready meals was a 3 bean and rice chilli meal for one. The cost of that single similar ready meal was almost the total cost of ingredients to make this meal of 6 servings and I know every ingredient that went into this Chilli. Making this a truly cost effective and tasty recipe.

Late to comment on this video, but EVO is not supposed to be heated. It's for dressing, drizzling and dipping. And red onion is best for eating raw. Yellow onion is best for this recipe.

This is how I make mine I do add dark cocoa I get at Trader Joe’s. N use Greek yogurt with Trader Joe’s green goddess seasoning. Delicious

Mushrooms, eggplant, zucchini, sweet potato helps with the "mesty" flavor. I dont rinse the beans as the liquid helps with the texture.

This is the only vegetarian chili video that I have found that adds some to a blender and then pours it into the chili. It makes all the difference.
