I'm learning to rate your results by the 'hang time' meaning the amount of time it takes you to speak after you start the taste test. This time was a full minute! Definitely a record. "Sorry to keep you waiting" LOL. Previous one I've seen was 30 seconds. So this must be good! I'm currently in the 9th hour of a brisket cook on our Weber S335, basically the same BBQ. Currently in the 'stall'. My 1st brisket!
i just tried my 1st brisket on a gas grill & I went through 1.5 bottles of propane on low (1 burner). Turned out great. I normally use an off-set smoker. I went 14hrs on a 15lb brisket. 12hrs or internal temp of 160 then wrapped her up tight before the "Texas Stall". She turned out great! Sprayed her down a little every few hrs with Apple juice, liquid smoke, whiskey, Apple Cider Vinegar mix.

Cooked my first brisket. It’s still resting in the box. Weighted about 4 kilos, and took 11 hours. Hope it tastes good. One thing I’ve been wondering. If I keep my brisket on the lower grill grate - not warming rack - should I put my ambient probe next to the meat on lower grate, or should I put it on warming rack above the meat? I noticed that even after doing the crutch, the temp did rise very very slowly. At the time my ambient was on warming rack and it said 130C. I lifted my brisket on warming rack and only then it warmed up to correct temp.

Update: I thought this is going so easy- nope. I wasn’t getting the smoke I wanted, so a couple fires later after moving things around I took a piece from my toaster oven to get the smoke box closer for better smoke without the 🔥 yeah! Also, I’m cooking a much smaller piece of meat, I’m glad I thought of that while following D’s instructions for a brisket ( this stuff takes learning). So the temp goes lower for more time for smoking. Small piece of advice my fellow newbs; start small and if you can get the igrill app!

I’m planning to do a brisket on my Weber gas grill. I’ll buy that smoker box. Do Weber wood chunks fit in the box? I would prefer chunks more than chips, since chunks smoke longer - as I understand. Just ordered Weber Connect and Smoker Box 👍🏻👍🏻👍🏻
I tried smoking pork butt. Bought Weber chunks and didn’t put them in water. Soon there was a campfire inside my grill! Then I put wet chunks and those worked very well. I found that the smoker box doesn’t have to sit above the flame. Once it get’s going, I just put it on the grates anywhere and the airflow makes sure it burns ok.
Great video. Question : if you find the brisket is not done, do you put it back on the grill or do you finish off some other way. It seems after being off the grill for 2 hours you might have an issue with keeping it tender if you have to recook somehow.
I subbed you the other day. What temp will this grill settle into with 1 burner on as low as it will go without a smoker box. I like to low and slow pork butts alot. Thanks in advance.

That's great. But 1.5 bottles is a lot of propane. Seems 1 tank would last up to about 22 hours.

I have a charbroil 5 burner gas grill and is it better to put the smoker box in the corner or on top

Did soaking the wood chunks eliminate the chunks catching fire completely, partially, or no difference ?
It helps make the smoke. If you don't they'll just burn up. Even soaked they may flair up. It's not a perfect science.

+Larry Larson It depends on the outside temp, but you will have no problem slow cooking pork butts with or without a smoker box.
how do you like the stainless steel grates vs the cast iron? not necessarily for brisket but other foods, searing, non-stick etc

Thomas Kaznowski I found adding wood chunks about every 2 hours works out well. Since they last longer and give a deeper smoke than wood chips.

I prefer chunks, they last longer IMO.
