I was taught veg that grows under the soil (potatoes, carrots, etc) go into cold water and veg which grows above (broccoli, cabbage) go into hot water.

They found it unlikely that the roots of a poisonous plant could be good to eat. (The same thing applies to tomatoes - every part of the tomato plant except the berries is poisonous, and Europeans were skeptical.)
Tbf tomatoes also had the issue of being served on pewter plates that reacted w/ the acid in the tomatoes to release its component lead content - even faster way to lead posioning than the white face paint lol

They, like eggplant, are from the nightshade family which is what caused fear of poisoning.
Potatoes are Delish so are tomatoes. Don’t eat the roots or leaves and manga, manga!
