Too much of MSG! It's deadly. You know you can make your own soya beanpaste. It's not difficult. The meat and soya bean paste and the tomatos have a lot of flavour. YOu really can leave out the MSG and it still taste really good. I was born in the area of Laos that specialised in Khao soi. If you fry the garlic and then fry the beanpaste well in the oil before you add the meat then you will have more flavour and fragrance in your Khao soi sauce.

Yup. Eaten in normal quantities (i.e., an amount that actually tastes good in food, not multiple heaping spoon-fulls all by themselves, for instance), it's totally safe. Anyone with any doubts should watch Adam Ragusea's pretty exhaustive video on it, where he has a university food scientist on to discuss the various studies on it.

That's not how we make it. You need the real stinky bean. And that's way too much garlic. And you don't need to add sugar and oil. Smh
