100 percent agreed. Offsets smokers produce way better bbq than pellets smokers. I bought a pellet smoker about 3 years ago but it just doesn’t do it for me. My 13 year old offset smoker never disappoints me.
I just bought an Old Country Pecos smoker last Tuesday 22 Sept. 2020, I haven't cooked on it yet, just seasoned it but I am impressed with the quality and performance. I was able to maintain 275 degrees while seasoning the pit, impressive. Looking forward to my first cook, chuck roast, this Sunday.
Cooked my first chuck roast on my Old Country Pecos stick burner, excellent!!! My second cook was a tomahawk steak that I reverse seared,I am very pleased with this smoker. Truly the way to go, stick burner.
Love this guy. I’ve seen dudes use tables saws to make the pieces smaller and all other kinds of stuff. This dude put a Fred flinstone piece of wood in there lol
What I enjoyed was how he couldn't even wait to slice a piece, just started eating it off the bone. Really made me believe it smelled and tasted as good as it looked on the vid.
@@badgermoon9229 Beef plate ribs are, IMO even better than brisket… a richer taste. If you’ve not tried them, Sam’s Club butchers can be persuading to cut you a 3 rib slab. Not cheap, worth every penny. They are also less work.
Loved my stick burner but once I got a pallet grill never used it again, especially for brisket, I set my pallet grill to 190f and leave it over night without worries, can't do that with a stick burner.
So many terrific tips, and the pacing is perfect. Love plate ribs. Not always easy to get locally. Our Sam's Club has them if I beg and give my fave butcher a few days. None at Costco. I'm do my cooking on a WSM.I've been hesitant to investigate an offset smoker. I just didn't think you could pop that big a piece of wood in there and make tending the smoker a bit easier. The way that wood caught, I'll wager it was kiln dried. Good job, just subscribed.
I have a pellet pooper and the bbq turns out good...a lot better than some restaurants IMO. I have watched a lot of videos putting an offset smoker against a pellet pooper and in blind taste tests, the pellet pooper won 10% of the time on average. I use a pellet pooper because of ease of use because I don’t have time to babysit a fire, but when I do have time, I’m planning on buying an offset smoker. I’m doing a lot of research now of offsets...great video though, brother! Smoke on!
Run out now and pick one up at Academy sports for $399. Just be sure to look it over good because some do have flaws. I like like my webber kettle with a rib o later just as well.
They look great! I'm about to put some tomorrow. My question what is I have a smoker similar to yours 1/4 inch thick how many plate ribs do you think I can put ? I plan on putting 4 , what is most Beef Plates you have put in your smoker, Thank you and great video.
4 sounds achievable. I would stagger them 2 in a row and spaced out at least 1” apart. At the 4 hour mark i would flip flop which ribs are closest to the firebox so all of them cook evenly. Good luck! (Most i have ever done at once is 2 racks).
Hey @Better Than Good BBQ! I'm curious if you ever wish you had the Brazos instead of the Pecos? Do you think it's better to buy the Brazos with thicker steel and top shelf already in? Do you the Brazos is worth 2x more than the Pecos as far as performance and value? I'm torn between Pecos to save money or Brazos for the possibility of better performance and long term value over time. Here in CA its $850 for the Pecos and $1600 for the Brazos when I factor in tax and gas to pick it up 3hrs from me, so it's a big investment but I dont want to drop $3k+ on a custom since I'm new to stick burners. I hear that with a stack extension and baffle removal, these thing perform similar to a customer! Would love your thoughts, thanks!
Hey there sorry I'm a little late in responding! my 2 cents are to recommend you spring for the Brazos. i think with the modifications you mentioned it will perform great for a long time for you (check out @madscientistbbq for awesome videos on this) ... with BBQ you really do get what you pay for. i've since sold my Pecos and invested in a custom offset smoker... you will be happy you spent a few more bucks to ensure a longer life out of your pit and a more enjoyable cooking experience. cheers!

I think there is a huge shortage specifically for this and short ribs in general. I have not seen normally cut short ribs at my grocer in like 10 months
oh, one of those grill snobs 🙄 ...people can make plenty good food on a pellet just fine, not everyone has the time nor the desire to deal with a stick burner on a Wed night. I'll keep that in mind if I ever wanna win a BBQ contest. In the meantime, I'll stick with the Traeger and be a scrub. Jesus Christ
No need to use the Lord’s name in vain… I’m sorry that I got under your skin. I’m sure the food you make tastes awesome too; and you’re completely right that a stick burner is not for everyone. Just wanted to suggest giving it a try because it is pretty great!!
If you are a true BBQ lover you don’t care how other people make it. Don’t down other people because you don’t like there grilling methods. Know it all people are terrible
When you manage a fire on an offset smoker, you wake up at 3AM and run a clean fire for 12+ hours that requires constant attention. You know the difference between clean and dirty smoke, and it is a labor of love. Pellet “smokers” require none of that - they are basically outdoor ovens. So yes, I believe I can comment on this with authority. Not saying I know it all, but I do know pellet “smoking” does not compare to offset smoking. … real BBQ pit masters agree across the board and no, there is no debate :)
I have both a Traeger and a Oklahoma Joe and I can agree that the offset smoker beats the pellet grill everyday and twice on Sunday!
