Pork Spare Ribs on the WSM (direct heat style)

Mop sauce Recipe:
- 1/2 yellow onion
- 1/2 stick of butter
- 6-8 cloves of garlic (whole)
- 1 lemon (sliced)
- 1 tbsp mustard powder
- 1 tbsp black pepper
- 1 tbsp paprika
- 4-5 tbsp franks red hot
- 4-5 tbsp Worcestershire
- 2-3 tbsp brown sugar
- 1/4C Apple cider vinegar
- 1/2C beer

Checked out your video before doing a full rack of ribs...I usually watch a few to get ideas...this time I stopped with yours.. after all, I'm a former St. Louisan... My experience with ribs is limited and they are always tough, with great smoke flavor though... I've had trouble keeping the temp down to 250... overcooked meat... My setup is just like yours... If I remember, and can find this post, I'll come back to let you know how my next cook turns out... In the meantime for anyone interested ... here's my former recipe, When It's Smok'n it's Cook'n When It's Burnt, it Done! Enjoy... Oh, does anyone boil their ribs first?

How do you do a tutorial on how to use a WSM and not say how you adjust the vents? Really? I think you drank too much beer.

Can you cook a pork butt without the water pan. Ribs look great
I did a pork butt this past weekend with the fire dial which splits the difference. It turned out great. My next pork butt will be just direct heat.
4 years later so hope you get this. Thank you as you showed me exactly what steps to take. Two questions though, how much coals do you use, and secondly I want very very little spicy flavor. Suggestions? Thanks again. Great job!!!!
Charcoal brands don’t matter use what you can afford and uhhhh use a rub that has no spicy flavor

Alright, I gave this a shot yesterday for Memorial Day. I did the C-ring for my fire; used a Trader Joe's rub and HEB Honey bbq sauce. The ribs came out pretty good; it took 5 hours total on the grill. Lessons learned: 1) use newer charcoal (mine was a little old and took longer to get going; 2) use 2-zone fire to avoid any potential drying out; 3) better rub than what I used. Besides that, I really appreciated your step by step 3-2-1 method. My family enjoyed the ribs and this video gives me the confidence to move on to some other live-fire meats (beer-can chicken, pulled pork) - I don't think I'm ready for brisket yet. Thank you so much!

dumb question. Did you play with the vents at all or were they fully open? You see you put the meat on when the temp read around 350F, but it looks liked the cook happens at a bit of a lower temperature. I was curious if you had to play with the temp of the cooker at all.
