Five years ago we spent 7 nights in San Jose, good choice. We ate breakfast twice at the restaurant you showed at the beginning. Then on your beach day you walked down next to the Vidanta resort. That is where we spent the week. We enjoyed that location because it was walking distance to town. Thanks!
You can use credit cards in about 95% of Cabo or San Jose. US dollars are accepted everywhere but you'll get a better price in pesos. There's plenty of banks where you can go to the ATM and get pesos out of your US bank account. I wouldn't go to the money exchange you'll get ripped off big time.

We are going in two months. My question to you all is do you pay with CC or cash when you are shopping?? Did you get pesos? Or do you use US $?

All you do is shop and eat. I can do that at home. What about things I can only find on the Baja of California?
