If your not already doing so for the stew: Red wine. Merlot or Cabernet are your best bets, and since your cooking with it, you don't need top shelf. just a cheap $10 bottle will do. Depending on the amount of brother your making, a 1/2 cup dropped in as it comes to boil and set to simmer will burn off the alcohol, and gives the brother a deep, rich flavor. If your concerned about the booze taste, you can always grab a pot, and bring the wine to boil separate before adding to the stew. This also prevents the wine from dropping the temp of crock pot and the rest will burn off as it simmers. Chuck Roast is also called Pot Roast, and it a good cut for the stews. I myself use this or blade steak. You want a piece that has decent marbling through the meat, but avoid roasts with the large slab of fat on one side, its not as tender as its an outside cut, and your paying for fat your not eating as well. Now you may think this is crazy, but a few things to try is marinating the meat over night. Try either coffee if you like a nice earthy taste, or Dr.Pepper/Coke/Pepsi, if you like it sweeter, depending on your personal preference. All these choices will tenderize the crap out of the meat as the acids breaks down the connective tissues in the meat. Avoid using salt for marinades, this actually toughens most cuts when left for extended periods (over 4hrs). If you want a bit of extra sweet to balance the wine, marinate with pineapple. The bromine does the same thing as the acids, but this is more of a natural tenderizer.
For food i recomend you try looking into some creole cooking if you can handle it, or classical french cookery, its oftentimes just simple done right, if you like mushrooms i recomend chicken marengo (one of my favorite recipes) or chicken marasala which i make regularly at work
Yoooo chuck roast is so freakin' good. My family and I only really make something called "Ranch Roast" with it but my goodness, It's divine lmao. Awesome games as always dude : )
