I have a insight about this. What if companies hire just for intern in descent numbers. In this way candidates will get experience and companie's small workload will be balanced. Apart from creating blog posts and all I think this will break the chain.
For me, I basically applied to hundreds of companies. No one called back. 😂But then, I got a call from a company that I didn’t even apply to and later got my first job. The whole process took 1 n half month.

Just enough to survive😂 The initial salary will be shitty only most of the time. But once you get a little exp, it is definitely going to increase.

Penetration testing is useless. Soc analyst is good career option
SOC roles are more in India so it depends on your interest, you can get a lot of pentesting jobs too.
