It appears as though you are smoking under a covered patio. However, have you tried or use a smoker cover for this setup? I’d be interested in knowing what cover would fit. Pit Boss indicates they do not offer a cover for this with any of the smokers people have asked about on their website. Just hoping to find someone that has one that can offer some suggestions.

Hidilian check out my new video I accidently had it unlisted. At the beginning of my cook I saw some huge temp differences once there was meat inside the box. Towards the end of the cook I started playing with the baffle and was watching the box temp. Still a lot to learn on this one I'll try to keep posting videos of my cooks.

@@edwardalvarado4597 thanks for the reply... when i saw your temp diff was only 20 degrees I was shocked... I am lucky right now if its within a 100 degree of my barrel to the point i've thought about dropping in an dial electric heating element.. I went 5 hrs on a butt and was gaining nothing.

@Hidilian you want to set your shelves up so that the butt is near the top but not all the way. Start with one hour or so on the smoke setting. Then crank it up to 250-300 and add a smoke tube. Also play with the damper a bit I started with it at min and after a few hours moved it to the center and my temp spiked in the box a little higher than I wanted so I closed it some more.

Check your kitchen stove, it operates by fluctuating the temperature on the average. So if you set your oven for 350 degrees, the actual internal temp could be between 300-400 degrees, but the average of those high and low temps will be 350. And I bet you a $1 your grills burn cycle operates on that same principal.

I have the same Smoker what did you use to close up the holes on the back?

Skeet Ross Hillman fender washers 1/4 x 1-1/2 two per hole. Put some lava lock and a nut and bolt. Lava lock isn't necessary but I had it laying around from my old grill.
