I've attempted to "study'" progressions of Christmas songs in pursuit of some kind of pattern and noticed much of what you did. My main takewaways were 1) frequent use of the tonic, 2) traditional and folk-based songs leaning heavily towards I-IV-V progression, 3) 30's-50's era "classics" typically based on ii-V-I or vi-ii-V-I, 4) dominant chord almost always a dominant 7th, and lastly 5) a surprisingly widespread use of secondary dominant. The half-diminished ii can do some heavy lifting but despite it being called the "nostalgia chord" or the "Christmas chord" I really didn't run across that many uses of it. I really like what you came up wiht at the the end there. It's probably a touch more complex that most Christmas songs but it does a good job of conveying the warmth and nostalgia that tend to typify Christmas music. I'd love to hear a melody on top of it!
