    My Mom's family lives in ALA.
    Cooked grits with cheddar cheese & also cornbread was what we had several times with our meals - so good. Dad liked it also.
    (I was told by one of her sisters - that the "original" grits was the corn cobs that was given to the farm helpers & they broke them into pieces & pounded them & ground them into corn flour to make bread.)

    I do 6 parts liquid (heavy cream and milk) to one cup of grits. I bring the dairy up to 180 degrees or so, then add my grits. Stir for 3 or 4 minutes until they BEGIN to thicken, then turn on low, continuing to stir off and on, until the gritty texture goes away, 45 minutes or so. Add salt and butter

    You should definitely make a longer handle just for the victoria grinder. My mom had someone fabricate her a longer handle for hers and she only uses the longer handle bc of the leverage, it makes it almost 30 or 40% easier to grind. God Bless yall, I am so happy i came across your channel Im in my mid 30s and I am really attracted to this self sufficient lifestyle, as a kid we had basically a small farm. We had about 50 free range chickens, we had pigs some were wild pigs we caught, we had gardens and horses as well but it was my step dads property so when my mom and him split that was the end of farm life, I lived on that farm for almost 9 years and learned so much from those 9 years. I can't wait to be able to buy some land and start my off grid homestead!

    I purchased last year McKaskle family Organic Popcorn & Grits , when yall 1st showed us popping popcorn on a Saturday night video - It was the best popcorn I've ever had , I purchased again about 5 months ago and got plenty and mentioned yall both when I purchased both times ,
    Our granddaughters loved watching me make real popcorn popped ( Not microwave no more at their home anymore either , They tell their mom & my Son we want Noni & poppa's popcorn- I bought them 6 bags also .

    Hey guys! I was pondering the grit cooking time. I was wondering if you have tried soaking your grits in the measured water overnight in refrigerator like sometimes is done for soup beans? My grandma did that. She told me that "coarse-ground' grit she soaked because of bits of husk and it made it softer in cooking process. If memory serves me, she did not cook grits that long, maybe 15 to 20 minutes. Might be worth a try!

      Thinking the same as I watched this. Grits like that, we soaked the night before. Quarter cup per person, so that is the same. Made for faster cooking for sure? Started the water to boiling, then start any bacon or small meat patties. Stirring and cooking grits to spitting stage, last, eggs, hopefully in the bacon grease. Cut up any fresh fruit or tomatoes, pour drinks and serve. 100% my favorite breakfast. Even the times with no meat, no fruit, and just water.

    Danny, I’m so thankful you showed the regrind with the hand grinder. I have one and was going to get another because I wanted non-electric backups. I knew it would make things a bit more difficult than “normal” but you gave me a real understanding as to just how difficult it really is.

    I've been grinding popcorn for many years and have learned to only grind what I need for each recipe. If you grind whole kernels of any grain, it starts to oxidize and within 24 hours it will start turning rancid. Keeping it in a freezer will slow the oxidization process but not stop it.
    I live off grid and have a chest freezer but it is for temporary storage only. If I plan on storing anything more than a month, it gets either pressure canned, dehydrated, pickled, fermented, smoked, or cured. And when it comes to grains, they store perfectly fine until they are ground.

      Where may I ask, did you get your einkorn?! I would love some to keep in hand as opposed to the genetically modified stuff. Most people that have an intolerance to gluten, can in fact eat einkorn because it is still an original wheat product from old!! 😊

      Great to hear! I have been grinding for a number of years now. I began grinding the hard red winter wheat and the softer spring wheat. Both were hard to grind. I would crack it first and then run it through a second time to make it fine. With Einkorn, Pima, Red Fife, I find they grind much easier and I can grind them as fine as I want in one pass. Their ease of grinding means my grinder will last a lot longer too.

    Ground up some red popcorn kernels today. Also ground up popped kernels and they came out fluffy. Trying them in cornbread.

    I store popcorn in bulk to pop but also as a backup to grind. I have not tried to grind it in my Wondermill yet, but I have the attachment to do so. I'm happy you showed your Victoria manual grinder because I picked one up last year, also haven't tried it yet.

    Are you look for a commercial stone grinder? We have a home mill that we LOVE. It’s a mockmill and I will always sing that companies praises. Buts not as big as metcalf mills would have been.

    Looked beautiful, and tiring with all the sifting. Plus manual re-grinding smaller. Ouch. Not sure I've bought any grits in the last 20 years as nicely sifted as your home ground. :) Nor corn flour come to think of it. Mentioned in another comment, but I'm sure we just soaked big grits the night before. Water to just plump, so no straining involved. Can't recall if we measured or eyeballed the soak water. Then used one and a half cup cooking water to one half cup soaked grits. Haven't come across any that big in a long time, but I'd try soaking first vs re-grinding.

    Loved this video!!! I bought a Retzel grain mill probaby at least 40 years ago. I didn't want to spend too much money on the electric one so I bought the hand grind one. Well, one time of grinding our wheat into flour was all it took for me to tell my husband to come up with some way to make this easier. So he bought a pulley, wheel and belt and set up and attached to an old electric motor and attached it all to a big thick board. LOVE LOVE it! Have used it ever since. I still have the handle though just in case!!

    I live about two miles from the James River 25 to 30 miles south of Richmond VA and everyday I wake up I hear them in Canadian geese my whole life well they're chopped down forests all around this county line 0 we live on a block that's about 20 to 30 acres of woods and I wake up and it sounds like I'm in a forceful every bird you can hear that's beautiful to hear about 30 or 40 different birds singing a song trust in Jesus

    1st thing I noticed was the Tupperware brand measuring cup ! (I have several sets!) 💕
    Manual grinders are best to have on hand for quality but electric is more convenient (until it breaks down or there’s no power)

    I use to watch grandma do this but at age 5 I didn’t know why my job was to gently pat her sifter , grandpa would crank their mill on the back porch once he did that he brought it in to grandma, I was pulled off the butter churner ( thank god because my little arms were tired 😂) grandma sold her butter and eggs to the little store in Berry AR where they would get coffee, sugar, salt and pepper and any clothes and shoes . That little mercantile sold everything but they raised and grew everything else

    Good morning Danny and Wanda. Nice set up, I have from a small manual grinder to a Williams 16” stone Mill gristmill that needs restoration. I have quite a bit of popcorn in storage. Never know when it will come in handy.

    Beautiful. I grind my own flour I have a n electric and hand grinding mill. Hand grinding mill gives you a work out. But does fantastic. But I appreciate having electric too. Beautiful milling of the corn.

    I can’t stand jiffy corn bread mix. But I don’t like sweet corn bread. We have a Mill that we get our corn meal from. Makes a big difference!

    I love popcorn grits!!! Got some a few years back. The Miller died , so can’t get any from him.

    Instead of freezing your corn you can get big mylar bags seal it with and put it in buckets

    Hello Danny and Wanda. Thanks for sharing the Bravo 4 Mill. It is something I might consider to save for.
    I currently just have a Victoria hand grinding mill and it does take a bit of time and energy.
    I like to make popcorn so I'm looking forward to getting some of their popcorn.
    I appreciate you sharing doing this and how your going about it. Good to have some stored ahead and stay on top
    of these prepping items.

    Glad you posted this. I did a small batch by hand & loved it. I also tried my dehydrated sweet corn vacuum sealed in jars (2015 was an awesome corn harvest). Both made awesome meal.

    I was admiring the brilliance of the lid ... then my inner designer kicked in and I thought: How cool would it be to have a 3 section buckets with a lid that swept or vibrated the milled corn over 3 sizes of screen?

    I seen were you pop the popcorn and then put the popcorn in water getbit soft the run it thur a strainer then cook it down thst way

    I tried finding their popcorn like you have in the 25 lb bag to order and could not find it anywhere on their website????
