The AI can't seem to handle a single entity riding circles around them. They end up running around in the doomblob, which results in reduced missile fire because, by the time the missile unit has readied up their attack, an ally has walked in front of them, obscuring their target, so they unready their weapon. Trying the same horse archeryness against a few Forest Bandits or Sea Raiders can be much more painful because they end up more spread out, so shoot more often. Also, note that the infantry with shields will not have them raised, making them easy arrow fodder. The same effect can be achieved by riding in a very large circle with cavalry chasing you. The ones just far enough back will ride with their shields at rest, allowing you to sneak an arrow through. If doing this, I usually prioritise melee cavalry (to allow you to do things like pick up arrow refills without getting poked), horse archers (which can be a pain to hit, because they will ride ahead of you in a circle, meaning you have to account for deflection shots), archers and then infantry. Although, if you can save a few archers for last, while using their allies to block the shots, you cn use them as refills because dropped weapons will despawn over time. Also, you can smith a ridiculously long hafted glaive to make the melee portion easier. While it won't do the cut through of a 2-handed axe, it will allow you to do drive-bys on most infantry without them being able to retaliate thanks to its reach.

I suggest you try a top Vlandian crossbow on horseback, and with ammo that gives blunt type of damage (Have you really not noticed them at the market? unique ability to convert damage type). This can work great against the armor of t5 t6 units, and in addition you can craft a two-handed mace with a long shaft.
