A “pantaloon” is a foolish pantomime character. The lyrics suggest that time will make fools out of us all. The protagonist watches his grandfather’s mind deteriorate followed by his father’s. As he grows older, he begins to follow in his elder’s footsteps despite his attempts to do the opposite, losing his mind just as they did.
I agree with everything you said above, but I think also to add to that. We just see these other two men whom he clearly respects lose their mind and we don’t know why. But finally, we do know why because how could anybody stay sane With death lurking over your shoulder? It’s an unknown unknowable void. And plus your friends they fertilize the ground that you’re walking on. How could that not make you insane of course you’re gonna lose your mind surrounded by death knowing your next or at least soon. Almost makes more sense honestly if we embraced going out on our own terms

I love this song so much, it is about Tyler's grandpa who had dementia and his fears that it may be hereditary (your dad is now the pantaloon) its incredibly poignant when complimented with Legend from Trench after his grandpa's passing
Unless Tyler is talking about a different grandfather, the one referred to in Legend was still alive by this time. I'd like to think he's writing from the perspective of his father, who saw Tyler's great grandfather die long before Tyler was born. Now he's voicing what he imagines his father's experiencing. "Now, it's your turn to be alone/Find a wife and build yourself a home." Tyler hasn't quite reached this stage in his life yet so this seems to line up with him imagining his dad reaching maturity.

I certainly also believe there's a level of bias that goes into listening to their earlier stuff after having heard the newer stuff first. It's cool to see where they came from, and how much they've improved, so it's easier to forgive the slightly grinding vocals and less amazing quality.
