The Best Chicken Salad I've ever eaten | Family recipe with Mom B (Kelly Bates)

- Come join me in the kitchen for my first ever Bates Kitchen guest: my mom, Kelly Bates! She brings a passed down family recipe chicken salad that has gotten compliments every time its been served! I also learned that my great-grandmother owned a restaurant and that this was her recipe passed down. My mom does not measure, so I have been doing some testing and will try to get some definitive measurements together and edit to add to caption and to my website later this week!
Ingredients:
Chicken
Mayo
Celery
Relish
Mustard
Salt
Pepper
Optional:
(pick one or 2 not all at once now lol)
Pecans, cranberries, raisins, grapes, or drained mandarin oranges.
approximations to start with:
2 chicken breasts (or 1/2 rotisserie chicken)
2 stalk celery diced
3/4 cup mayo
1/2 cup sweet relish
1 tsp salt (to taste)
1/2 tsp pepper
1 tsp mustard (any type)
1/8 to 1/4 cup of optional additions you choose (I liked with pecans and cranberries particularly)
*THESE ARE APPROXIMATIONS! I AM WORKING ON A MORE SPECIFIC RECIPE. START SMALL, TASTE TEST, AND ADD MORE IF NEEDED! I have purposely made all the ingredients less than what you will need so that you can add as needed because taking ingredients out is impossible! be careful not to over salt.
Shred chicken of choice,
add mayo, celery, relish, salt, pepper and any optional ingredients and mix well. (you may want to start with 1 tsp and add if needed.)
To make in a ball for dipping with crackers, mold into a rough circle by hand. Crush approximately 1/4 cup pecans and roll until covered.

I know gosh our family misses the show sooo much. One of the very few shows these days that my husband and I could sit down and enjoy and watch with our two kiddos.

They are all thriving with all thier own youtube channels most of them & can announce news when they want i miss their tv show but they are doing so well on youtube & we not have to pay to watch them on (up) channel i bet (up) channel is regretting their decision now cuz us fans are truly loyal to the bates family & will follow them to the ends of earth 😁

Wow Zach, Salt and pickles you had that right she added more than I dreamed then I had to stop and think how much I used in salting water ha ha. I used the grapes and we cut up two different kind of apples chunks and we use Walnuts. Can't wait to try your version and then maybe add a few other things ❤

Here’s an idea - maybe one time if Mama Jane and Papa Bill are visiting, you could make a dish that Mama Jane was known for and have her as your special guest. I bet she would LOVE doing this !! And if you and Whitney and kiddos are ever over at their house, you could just do the cooking segment from there!!!! I don’t know if she would actually be able to help, but she would still be a great guest to have on the channel!! 💕💕💕
Unfortunately Mama Jane and Papa Bill aren’t really traveling due to health. I so wish I had this channel before to document that. I would give anything to have that for my kids. We all take trips down there to see them in smaller groups, but it’s sad when health starts to wane. She makes the best turkey gravy in the world though and even if we can’t film it, maybe I can share the recipe sometime!

I love homemade chicken salad. I have a homemade sweet relish that I put in mine. But I also add finely chopped onions. Love it with craisins and grapes.

A secret I learned working in a cafe while in college... Mix half sour cream or greek yogurt and half mayo... And in addition to celery, I agree, one crunchy, (usually pecans) and one sweet, (pomegranate seeds are my favorite or grapes cut in halves). We never put relish or mustard, but we do add a bit of dill weed... Here in France we can't get Best Foods or Hellman's mayo (which is our only choice on either US coast) but we try to keep the mayo similar... not sweet and not too much mustard or vinegar in it... I have amazed French friends and family for 35 years with some super simple US staples... Thanks

It's SO great to see your mother in the kitchen! I would love to hear more about the meals/recipes you ate growing up. When I boil my chicken, I use onion and garlic powder, salt, pepper and some red pepper flakes in the water (mostly when I boil the chicken for making chicken enchilada's); adds such flavor to the chicken. Thank you for sharing!!

My Mom was from the Midwest. She made her chicken salad with a little green onion and dill pickles. It was so good. More recently I wanted a lighter version that still had that great flavor. I used homemade chicken broth to mix it along with a little mayonaise. I got a lot of complements at a pot luck. You two are fun to watch cook together!
