i believe at the moment, the balance of things were upset, so the portal fails to close and Gomorrah escapes and well he just wants to devoure, that's his nature, he doesn't care about the contract. and so yeah, he probably just broke the contract as he's no longer used by Cereza in the game

Supposedly, his contract with Bayonetta is that he’s only to be summoned to eat Divine entities or beings, basically anything affiliated with Paradisio. If the thjng Bayo’s fighting isn’t aligned with Paradisio, then Gomorrah considers that a breach of contract and will turn on Bayonetta.
