Ingredients
8 Cups Parboiled Rice
1 pound package of dry field peas
1/2 Cup Cooking Oil
5 3/4 cups of broth from peas or use water
Ham Hocks (desired quantity)
Neck Bones (desired quantity)
Ham bone (if you have on hand)
Onion Powder to Taste (Optional)
Garlic Powder to Taste (Optional)
Salt (optional to taste)
Follow directions in the video.

8 cups of rice with only 5 cups of liquid just doesn't sound right but it looks like it came out. I always thought it was a 2:1 ratio.

😂😂 I know, it seems like a lot of rice and not enough liquid, but trust me when using parboiled rice, if you use the 2:1 ratio the rice will come out soggy.

We geechee gullah cook it on the stove top all in one pot clean meat pigtail, smoked neckbone, fresh neckbone feild peas cooked down for 2hour no soaking peas salt n pepper onion powered onion after cooked down add ya rice n butter whayasada yh

My Mama's family is Geechie and they soak their peas overnight. We like to use field peas, Black eyed peas and sometimes even purple crowder peas.

I will say it looks better than most Hoppin John recipes I see on The Tube, but it’s still a little too “Light Skinned for my Southern Black Traditional Experience….. I still give you an 8/10, which is still Top Tier in comparison to the most… Great Job!!!!!

if I were to increase the rice to 10 cups, how much liquid and oil should I add?
I would recommend increasing the oil to 1/2 cup and an addition 1 3/4 - 2 cups of tomato juice.
Was that 5 3/4 cup of liquid to 8 cups of rice?

Would there not be a lot of fat from the hocks and pork neck. Why add extra oil
The ham hocks and necks bones does provide some fat, however not enough for the amount of rice used. The oil can be omitted, however the rice will be very dry.
