My husband just bought a bigger one the Pit Boss Pro Series 4 model and I’ve smoked a few things in there and that seems to be a great smoker. Definitely give the recipe a try. What are you using for a weight to weigh your pucks down so they are fed into the machine better? I’m having the same problem; looks like it works pretty good.
Mine is a scale weight. I took it off our rotisserie kit that we got a little while back. It came inside the box so I use that as the weight for the pucks. You can use anything that has some weight to it. If it fits iinto the hole without jamming. My husband suggested even a rock would work. You likely can buy a separate scale weight. I would think maybe Amazon or you can find it maybe at Walmart, Hime Depot or Canadian Tire. Hope that helps:)

Hello there! No question is stupid:) That’s great you a smoker for Father Day. Your one lucky guy:) I like to preheat with the smoke. You want it to get to a certain temperature prior to putting in your salmon or meat. The reason I rinsed it is to get rid of any extrasalt and sugar from marinating it. The marinate seeps into the salmon. You want the salmon to be dry but not super dry so after you finish rinsing it you wanna pat it dry a little bit with paper towel. Let it sit for about 30 minutes to an hour while your smoker is preheating. I find that this gives it the best results. Hope that helps. Let me know if you have any other questions.
@JanetSlowinski-k2d ya I remember doing that one over night (14 hours) but I have done it 2-4 hours as well. I think I was going to do it for 4 hours but then decided to do it overnight. Overnight just marinated a little longer. How did yours turn out?
Hi Fishin Trippin! Thank so much for telling me this. I honestly never knew that. Honestly, I normally do the brine in a plastic or glass container but I think what I did here was I didn’t have a big enough container for the salmon, so I laid it on the foil. I didn’t know that would cause a chemical reaction by doing that. I’m so glad that you told me. I will make sure not to that again. There is a chemical reaction between the sugars, the flesh and the aluminum or stainless steel during brining. Glass or plastic is highly recommended.
