Search for Kitchen Tigress on TH-cam, she wipe her egg whites until firm peaks, some recipes call for soft peaks.
She has a good reason for wiping it until firm peaks in her version.
If you follow that recipe you will make one of the best Castella cakes out there, better than the one you see in this shop.
I use her recipe and tweak a bit and could fool the best professional bakers in The Netherlands and I am not even a professional baker.

看了日本名廚、星級飯店到路邊攤 到 都是用手拌的 帶手套想太多了 跟本沒辦法工作 而且手感會跑掉 手套無法感覺蛋白有沒有消泡
會怕就買大工廠的 都機器拌的
