I don't think you are crazy, I am of the same opinion. The flights seem to be performed intentionally at slow speeds, not allowing the aircraft to build energy (And hence why so many people keep saying that it doesn't fly like western jets).
Not exactly that it can do 'better' as slow maneuverability is what's really hard to achieve and already demo'd here, but certainly it's not showing what agility it can achieve flying at faster speeds.

But when it comes to Russian fighter planes, the pilots seem to be paying the maintenance out of their own wallet (too?), so they are ultra careful with the things. Or could it be they care for their own health that much, so they prefer not pulling a lot of gs for as long as possible...

Huh, it look's like the N036B-1-01 X- band AESA radar with 358 T/R modules embedded in the cheecks is part of this production model. That would hint that line production has commenced with a base line production unit for the aircraft.
If it can also do synthetic aperture, that's pretty neat. Could be very good for the recon role. I doubt forward looking SAR can achieve the same resolution as a side looking one.
