Garlic is part of the Mexican culture. Mind you that I know because I have a large and extended family in the north, central and southern part of Mexico 😅 Mexican cuisine is awarded as a cultural heritage of humanity, so enjoy it however you like it. 😅
I made it last night. I do all the daily cooking at my house after years of my wife doing it. My goal is to make meals frequently that get a "wow!" so that she can enjoy being able to just sit down and enjoy the meal. This one got a "wow!".

It's not like Rick has had a legendary career and has an absolute laundry-list of professional accolades, right?

Love this, thank you! Is there any reason why you wouldn't recommend lime in this recipe? I always mash my avocados with lime but I'd hate to change the flavor of this guacamole verde ... I just like to keep my guacamole for days if possible
The tomatillos are pretty bright which would mimic the lime juice but also they are acidic so I'm thinking (but don't know) that they probably do the work of the lime

Not sure if anyone will see this but, you should teach people how to safely remove avocado pits without the knife. If you're about to smash them anyway, you don't even need a spoon. Just push on the other side of the avocado. It pops right out. Using a knife 🔪 there are thousands of people that cut their hands ✋️ and go to the ER just to look cool like a pro chef. 👨🍳 It's not worth it.
You are a master and pro. I think you should mention to be careful and not cut the avocado or remove the pit in your hand but instead do it on the cutting board. Save a few tendons and fingers!
I agree, at home I make it with roasted garlic and a lime from my tree. Sadly where I live its always made with butter avacados which turn it soupy. Hass avacodos are out of reach for most small eateries..

We all know youtubers need to keep producing content to pull in Ad-Money. The old academic rule applies here, "Publish or Perish." So I say to myself when a new Rick Bayless video comes out: let me guess, more tacos; another salsa, how many times can roasted peppers be original again? This isn't a hateful rant.

In Mexico we also grill the garlic along with the Serrano and tomatillo, and add a little bit of lime juice.
Here in AZ I use a sprinkling of garlic salt and light on the salt. The fresh cilantro gives the super taste!
I think you mean, "In some parts of Mexico..." Mexico is a big country. Rick has been all over Mexico. I'm sure he could also say, "In Mexico they..."

Doesn’t need limes. Tomatillos takes care of it. Also no garlic used for this recipe.
