Also, is genoche that much stronger than buttercream icing or can you use either. Lastly, at what point do you place the train on the base cake? Any tricks to avoid damaging it? Hey, thanks for the comment. I use a sheet pan 9*13 to bake the cakes, and used a cake leveller to cut the layers. Ganache holds way better than buttercream so it's easier to get a nice finish. Here's my ganache recipe sweetvalleycreations.com/recipes/chocolate-ganache/ I placed the train on top of the base after placing the base at the final destination where the cake would be at the party to avoid any damage. Mrinalini, the ratio depends on the type of chocolate you use and the consistency of ganache you want. To use under fondant we need a ganache that would set in room temperature (20•c). If you are using milk chocolate use 2:1 ratio. Recipe sweetvalleycreations.com/recipes/chocolate-ganache/ If it still melts at room temperature, refrigerate the cake for about an hour and cover with fondant as soon as it’s taken out. Otherwise you could try increasing the amount of chocolate in your ganache. I hope this helps. Happy baking!!!!
@@SweetValley okay.. thanks for replying... I'm using semi sweet chocolate... I'm fixing gonache with adding 1oz of chocholate to 1cup of runny gonache.... And it becomes quite thicker now...

Sorry, it's been some time since I made this, so can't remember exactly. I think I baked two rectangular cake 9'X11' for Thomas. The bottom round cake is a 9 inch round. Hope it helps...

What ratio you took for gonache,? I took 1:1 but after freezing when I spread it between cake layers, it got runny again....
