The knives you found are the diaplay knives that is why you can't pull them out. I'm not sure if the blades are actually on the ends of them. Sometimes they are and sometimes they aren't. You may have to destroy the block to see.
Good finds! Those fabric samples would be nice for making a patchwork quilt. A favourite winter project in front of the wood stove.
