I don't understand why people don't like buckwheat honey. I suppose it is because it doesn't taste exactly like what they expect honey to taste like. Instead, it looks and tastes a bit more like molasses. Although that does make it an acquired taste, it certainly does not taste "bad" by any means, it simply tastes a bit richer and more complex than other honeys.
Actually bees concentrates nectar to an average of 15% to 18% water content.. the drying up process is more complicated than just fanning on the honey cells... Fanning is just part of the whole process ...
Very funny. Yea it does have that "compost pile" aroma to it. I didnt try this brands though, i tried the Bee Raw. Definitely not a honey taken for flavor in my opinion. The only honey with a worse flavor is the Lehua honey from hawaii (via the asheville bee charmer)
Interesting.. I wonder why this is such a controversial flavor. Personally I absolutely love the taste.. I'd rate it above regular clover honey, and I was honestly surprised by how controversial it is.
Anything so absolutely and phenomenally good for you is going to taste a bit hardier, at least. I put it in my tea. Makes it much healthier. Drizzle a little on toast and on pancakes with natural syrup. I always liked a bit of molasses on my pancakes anyway, but this is healthier and tastes better. There is a buckwheat honey porter by screech owl brewery. That's got to be phenomenal. Going to be tough finding it.

It is out near the edge of the flavor spectrum and lots of people are not expecting strong flavors, other than sweet, from honey.
I decided to try it because it's so dark and I ate the whole had with my finger it was so good

I want recipes to make it taste better . It's revolting...
I don't think recipes will help it. It's just a STRONG flavor. Avocado and chestnut blossom honeys are pretty strong also.
