How to use Wild Yeast, Can you use Wild yeast for Distillation

  • In this video, we are back doing an experiment, Wild yeast VS Distillers Yeast.
    We Started with a LOW ABV sanitized solution for both the yeast samples.
    Left them to ferment and build a 1-litre colony, this was then used to do 2 sugar washes with only invert sugar and nutrient.
    So to focus on the flavor the yeast will add to the wash, the Wild yeast took 9 days to ferment and the distiller yeast fermented to dry in 5 days.
    Both sugar washes were 8% ABV washes to give the yeast a level playing field.
    Both washes were distilled to a low ABV of 65% to pull flavor into the product, the final result was 1.2l @ 65% (130 PROOF) and 1.3l @ 65% (130 proof) we then proofed both down to 50% ending up 1.6l @ 50% (100 proof).
    There was a difference between the 2 very slight but different.

    Thank you! I like your style - which is based in knowledge, good content and right decisions in content, which is interesting for beginners and for me too :). I am in hobby about 10? years... Something like that and it is always interesting to know how others do that stuff. Yes. Wild yeast. I do it similar. Fresh grapes or raisins with berries and with grains and quinces I blend in the blender. Add sugar and mix everything and store it in the 0.5L glass container with kitchen paper on the top. It starts bubbling after 3-4 days. This is good for whiskey type alcohols. Sometimes I add wine yeast after fermentation in that jar for mixing flavors to the next batch. P.S. In one video of yours I find something new and now I understand it better - boiling of wort before fermentation is interesting thing! Yeast is similar to us - "he" loves hydrated and soft mixes of sugars. I see it now, when I make beer. It is very interesting subject... Temperatures, water, yeast, boiling... Yes. :) Good video!       @@BEAVERDIY I don`t know. :) I watch Jesses videos, sometimes Bearded videos too. I think about chemical aspect of distilling... This is very nasty subject and I think 99,9% of distillers try to burn me in the fire of revenge... . This subject I think is not for show, but it is interesting because in the distillate is volatile fractions with boiling point after 100 degree Centigrade. We can`t remove them by distillation, because distillation process is in temperature range from evaporation at 50 degree Centigrade to boiling point of water, which is at 100 degree Centigrade. All nasty chemicals are in distillate present like Acetaldehyde at 102 degree Centigrade, Methyl Propanol at 108, Butanol 117, Methyl Butanol 129, e.t.c. I will send papers to you for knowledge of subject to your email. It is must to know.

    I think you hit it right on the nail. Wild yeast is unpredictable, but often more interesting flavours. Also freely available. Distillers is reliable and quick, but also clean. Good vid Dude.

      So true, the wild yeast is great for mostly sugar content from the base fruit and not so great for high sugar washes

    Thanks, again we learn from you and your experiments.They say that Popcorn Sutton's fermenting shed was so full of wild yeast that he never needed to add any yeast to his moonshine.

    Super cool video. I seem to have the best luck when I use oranges for wild yeast. I mush up a orange peel and all and sprinkle some sugar on it with a little water in a bowl. It almost always starts freminting and it's been constantly pretty good fremintations the times I've done it.

    If you really want to go wild, run your sugar wash through a used underpants first. Then let it ferment out. It will have some ballsy flavours.

    a brilliant test would be, the " mainstream" yeasts in comparison,, eg: Bead yeast vs DADY vs Blue Hybrid vs EC1118.. etc..etc.. a top 10 yeast shootout... for 1) SUgar washes, Grain Washes, Molasses, etc...

    Hey B, great video. I have never taken the time to do a side by side like this, and enjoy watching this type of content. Grandfather only used wild yeast from the fruits to make plum brandy. The most interesting thing to me, is how different strains of wild yeast taste from different areas as little as 1 or 2 miles apart.

      That is so true. My grandfather that I learnt from never use store bought yeast... and some ferments went great other just went sour.

    What was the original gravity... the biggest issue with wild yeast is a low alcohol tolerance

      Both starter jars were @ 4% ABV and for fermentation we bumped it to 8 % to give wild yeast a chance.

    I always use light brown sugar in my washes, I have never tasted the "sugar bowl" that everybody refers to .... maybe a good thing, but bad for my education

      Want ek het 2 koper geysers self wat ek moet nog aan werk en sukkel self om tyd te kry vir dit . Ek het al gedink om dit n hybrid te maak wat krag en gas gaan wees om die tyd wat dit vat on my wash warm te maak te verminder.
