Coconut milk splits if you boil and it will separate oil...always add Coconut milk at the end of cooking and switch off the flame immideatly..it will never split and become creamy..never ever boil Coconut milk

So yummy! It looks more like a Tom Yum seafood soup. The coconut usually curdles if you cook it too long...it's best added during the last few minutes after most of the soup is ready. It's my favorite to make and order when eating out. Those steam buns looked amazing too! Good job y'all.
If you don't remove the shell, how do you de-vein the prawn? I saw it but didn't understand how Odin did it. In India, we de-shell, then de-vein and clean thoroughly so as to prevent any infection. Edit: add the coconut milk in the end or at the start on medium flame. Also pour the contents of the coconut milk packet in a bowl and whisk it before adding to the pot. Importantly, Do not add the lime juice while cooking, heat and lime juice will cause the Coconut milk to split. Add it just before you eat.. it retains the flavour too!
