  • Extreme budget cooking is still possible in 2022 - and one dollar can still buy you dinner! Aldi is still a clear winner when it comes to beating inflation and saving money on food costs. Inspired by a video from Homestead Tessie, I created this frugal meal challenge to spend no more than $20 at Aldi and then create a menu plan to feed my family of four dinner for an entire week. The twist is: no ingredient could cost more than $1.00. Head to Aldi with me and my 18 year old son, Daniel, as we shop and plan meals for under $20.

As a family of three (I also have a son) on a tight budget, I find this video so wonderful, inspiring and helpful. I never thought to do such a challenge. I just go day by day, but this challenge is such a novelty, definitely trying it!
I usually go for dry legumes, that I buy in bulk, it's more bang for my money, and might get a few veggies for what I save, like carrots, broccoli or some lettuce. So that's my tip for people who want to do this for even less!!!

    • @buckeyedav1
      @buckeyedav1 ปีที่แล้ว +2

Thats what I was going to say dry long grain rice would have been a more frugal buy and healthier choice. Same with the veggies in the can, a few pennies more and you actually get more veggies than is in a can and a healthier choice. Anna In Ohio

    • @susansalvo3660
      @susansalvo3660 ปีที่แล้ว +3

I agree about the dry beans. I get the challenge was to have each item under $1, but buying the bag of dry beans and a bag of rice, would have been more economical, in the long run, because they would go so much further. The larger can of tomatoes, would also have been cheaper than buying a small can and the tomatoe paste. Frozen veggies are also under $1 a bag, at our local Aldi.

Wow,the price for basic canned foods is high. I never noticed the price because I just use the bulk beans I have on hand.
When I was at a loss on what to make I always liked the simple 7 ( 7 ingredients or less) cookbook to get good basic recipes to do basic meal plans.
I recommend that you try to grow herbs. Plant them with your flowers, they also flower and blend in. I now have herbs in the house drying ready to use all winter long. Home grown herb tastes so much better and adds a more complex taste to basic dishes than store bought herbs.

At Aldi, the highest protein beans are the black beans and the chili beans which are actually red beans in a chili sauce. I make a pot of chili with 1 pound of ground beef, one can of black beans, and 2 cans of the chili beans with an onion and seasonings. It turns out delicious and freezes well too.

Another option is to cook either ground beef or ground turkey with the crumpled up ramen noodles: stew everything in ketchup, onions, garlic ,black pepper and celery Make enough for 6 meals in one pan When you dish out the serving for 1 meal simply put that pan in the refrigerator so you are not creating more dishes to wash .Saving on soap /water and effort.

This is an amazing video and thank you so much for sharing! I’m going to say I’m team Daniel and he needs his dessert L O L. A box of pudding would’ve put you over for sure but it would’ve made Danielle happy I think! Being the fact that your family is vegan and not having to go out and pay the high prices for meat right now is a total blessing! My kids eat a main diet but I am vegetarian so my meals are a lot lower as well but I love the way that you’re doing this and showing that people can eat even a vegan lifestyle even if it’s only for a week it would save them a ton of money in the long run.

I really enjoyed this video. You quite adeptly showed where the rubber meets the road by being truly realistic regarding our purchasing decisions. Truth and reality are not always easy pills to swallow, but it is still very much what it is. If someone is not willing to change their mindset regarding shopping for basic necessities now, they will experience much more difficulties in doing so going forward.

In a pinch I use a can of refried beans, add a drained can of store brand Rotel, and some cheese in a flour taco size tortilla. Did this last night. Might add some mexican rice and drained corn to stretch it further.
Y'all are vegan and that is not my dietary preference. I'm completely okay with having some meatless meals, and I don't don't eat a lot of meat at all, but definitely not interested in being vegetarian or vegan as a life plan. I believe the complete amino acids and complete protein in meat is important for me.

Why don't people ever talk about saving money on household products like paper towels, toilet paper, cleaning products, washing powder? You could even tell how to save on health & beauty products plus otc medicine. When I buy groceries I don't just have edible things in my cart I have household, health & beauty as well as otc medicines. I would LOVE to see what laundry products you buy, what cleaning products you buy, what health & beauty products you buy and how you save on these things.

Pinto beans or kidney beans with a sauteed minced fresh jalapeno (usually between .15-35 cents each), a pinch of sugar, onion powder, garlic or garlic powder, a Tbsp of tomato paste, and a tsp or two of chili powder or even cumin or coriander or curry powder or garam masala is a really good sub for chili beans.
Your son is so sweet to help you like that; you ought to figure a little splurge for him into the budget.

    bread.
    french toast
    croutons
    stuffing
    bread pudding
    bread crumbs
    hotdog/hamburger buns
    sandwich
    thickeners
    rice.
    rice and beans
    rice casserole
    soups
    stews
    rice pudding
    stir fry
    pasta
    pasta salad
    soup
    stew
    casserole
    a dessert.
    with sauce
    with just oil and seasonings.
    veggies
    soups
    stews
    salads
    casseroles
    stir fry
    cold veggie salads.
    veggie broth.
now, hope,I know you guys are vegan, but,if possible, get meat bones.boil it down with a bit of vinegar to make bone broth for pennies.high in collagen.
bone broth in stores is insanely expensive and loaded with all kinds of additives.
    just a thought.
you can make a layered taco casserole with potatoes, too.
    or frozen french fries.
I did that for Thursday night dinner.
