    Thank you Christina! I am Laotian and my husband is Mexican, but he loves fish more than I do and I have always wanted to make this for him because I always crave it. He is Catholic so this is definitely something we can have for Fridays during lint when we can't eat meat.

    Hi, I just discovered your channel like yesterday, I was wanting to make the tapioca ball with the pork filling, that vid was spot on, I made the
    recipe today, I ate too much, you have to chase it with the chili, I encourage my wife to do the same, she about killed me, it is one of my favorite Thai/Lao eats. Now, I catch a lot of fish, I live centralized in north Texas between four major reservoirs that is stocked full of fresh water fish( stripers, catfish, and crappie) people pay guides $300 to $400 just to take them out to catch these species but I have my own boat so, I only pay for fishing gear. You know what is whacky, my wife is Lao, she was born there, still traditional, but very American, just like yourself, I bring home a lot of fish, I catch so many fish sometimes I give them away since I really do not like to clean them. In our household, I go catch fish, bring fish home, clean, and I do all the fish cooking!!! My wife as traditional as she is, have never made this dish!!! I sometimes wonder if she is an impostor Laotian. Really she is Laos, her fish paste, is really awesome, oh her preserve catfish is very good, when she is in the mood to make it, I hop down to the lake, bring home a 40 lb. catfish and I butchered that sucker up, she does her thing adding the seasoning, then puts the cut fish pieces in 5 gallon buckets, a few weeks later, her village people tear into it. I am going to watch all of your cooking videos by years end, wish my wife and I
    had the time to follow through with executing the process. Keep up the videos, you are a natural good speaker and photogenic, Laotian food is
    now coming into the scene and people love it!!

      hello! welcome to my channel and thanks for the comment! i think it's
      great that your wife makes fish paste and preserved catfish! i'm sure
      it's not the most glamorous task, certainly not something i would
      voluntarily do! i think there are many different ways to express
      where you came from or who you are culturally. cooking just happens to
      be one of them but it doesn't make a person more or less lao. everyone
      has a different interpretation of it. what matters is that we work as
      a community to keep/teach/pass traditions :)

    If I decide to freeze it, do I freeze the cooked or uncooked parcel? Also how do I reheat it? Brilliant video by the way :)

      you can freeze them immediately after assembling or after they're steamed. to reheat: thaw in refrigerator for a few hours then re-steam :)

      there isn't really a good alternative for it b/c it's fermented fish lol but you can use fish sauce or omit it. it will still be good without, maybe up the herbs and spices to add additional flavor!

    wow. My ma is Thai from there but always afraid of eating fermented fish sauce. But I think it's from the times we've seen it fermenting in pots on the street. This one in the bottle is totally good. No scales or bad stuff.
