Since then, did you try it again without discarding it? I wonder why you wiped the kombu? Thought the white stuff is just crystalized glutamate?
That’s what I had thought too. The book absolutely must be incorrect because it says not only to wipe the kombu but to soak the dashi elements and discard the liquid. It broke my heart to flush that down
