    Healthy Fall Salad

    Ingredients:
    butternut squash
    kale
    quinoa
    apple
    toppings: pecans, cranberries, feta cheese
    dressing: 3 tbsp olive oil, 2 tbsp ACV, 1 tbsp maple syrup, 1 crushed garlic clove
    Directions:
    preheat oven to 200’c / 400’f
    peel and cube butternut squash, toss in olive oil & salt, bake in oven for about 30 mins
    cook quinoa
    slice apple
    make dressing, massage half of dressing into kale
    add rest of ingredients + toppings to massaged kale
    enjoy as is, or pair with any protein of choice! 🌿
    Soup:
    roasted butternut squash (can also use same method for pumpkin)
    veggie or chicken broth (enough to cover all the contents in the pot)
    1 onion & a few pieces of crushed garlic
