ingredients:-
.700 gm mutton
.200 gm chana dal
whole spices
salt to taste
oil for frying
1 large onion
2 green chilli
1 tsp chop green chilli
1 tbsp ginger garlic paste
1 egg
1/2 tsp garam masala powder
chop coriander

I would suggest plz use 2 Tbsp whole dhania, 1 1/2 Tbsp cumin, few button chillies, salt, 1 inch ginger diced, 1 green chilli, 2 black elaichi and 1 tsp garam masala powder. Add to chicken or boneless mutton with 3 cup water (for 700 gms ). cook till tender and dry up mixture. I soak dal over night. 3/4 cup dal for 500 gms, 1 1/2 cup for 750 gms and boil separately. Grind dal in processor first and then grind meat mixture. Add 1 to 2 Tbsp thick yogurt in processor. Process and take out. Add little chat masala powder, chopped onion, podina. Taste salt and adjust. If mixture is moist, add some riceflour or maida. Shape into 18-19 kababs for 750 gms meat. Shallow fry. Do not over fry as every thing is cooked. I do not put garlic in shami kababs. Ginger tastes best with meat dishes. This is my tried tested recipe. Shami kababs will not break. Also I do not put egg in mixture for binding, I put maida. Plz try with confidence.
