how do you put the game's language in japanese?

the operator menu
press tab to open the in-game mame settings and from there go to "dip switches" and toggle the second "service mode" switch
up/down changes the options, circle selects
the language should be under "game options"
if you wanna leave the operator menu, just turn the service mode switch off
