So by law they have to have like tofu or some alternative because of people having certain allergies. That said there is also the risk of cross-contamination, so a lot of people will skip certain meals if they know for instance like I'm allergic to fish if I was in prison and I knew they were serving fish for dinner I would not eat dinner
