About Master Sushi Chef Hiroyuki Terada:
Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on TH-cam.
At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Chef Hiro, this is the best looking crab gratin l have ever seen, and l grew up catching blue crabs and cooking them myself. And l learned to make gratin at a young age. And you have still taught me a lot here. The only thing l would suggest if you ever make this again is to add chopped scallions, thinly sliced mushrooms, and sliced water chestnuts to the mixture before you bake it. I know that may sound unorthodox, but l have found those three things to compliment the dish very well. But your basic recipe is the best l have ever seen. Thank you so much for this.
the best you've ever seen.. he literally picked the crab.. made a roux.. put like 2 pinches of cheddar cheese and salt and pepper.. that honestly looked like one of the most tasteless gratins i have ever seen..
@billytimmons I probably would add a bit more cheese and seasoning myself, but the whole point of the dish is that when you have great crab, you let it shine through and don't overcomplicate the flavor. I think Hiro's preparation looks nearly perfect.

fun fact: insects evolved from crustacean, basically when you eat a crustacean you're eating something from which bugs evolved, this crab looks like a cross between a spider and a scorpion but boy does it look tasty :D, my hat off to this japanese master sushi chef :D

Agreed, unfortunately he didn't do it correctly. Crab have two nervous/brain centres. One is behind the apron, the other is between the eyes. Research suggests that both centres must be destroyed within less than a second to be considered humane.
