When Monty Oum was doing them, they looked amazing yes. But I think the animators of RWBY are trying their best to perfect their work and try to animate how Monty did it.
That's because a lot of them were storyboarded and animators didn't have much space to create their own fight flow. The very few fights or moments in a fight that weren't were really good. It's also because Monty had years of experience, meanwhile most (not all) of the animators don't have his experience.
I somehow find myself wondering if Ruby was doubting herself in her trailer? Sure she looks fine, but that is a lot of Grimm. The fact the Grimm are attracted to panic and fear makes me wonder if the Grimm happening to hear what was going on, or if Ruby began to panic? Probably an insane theory, but if so it would make me question the entire "Bravery" plot-line she has going.
You know whats the best thing bout Ruby Rose? At the age of fifteen or younger she designed a gun sycthe, killed a giant nevermore(Giant bird) destroyed a large pack of Baewolf, became the leader of team ruby even though the other 3 members are 17 years old. Destroyed a mech while being cute. She manages to stop a robbery alone and rekts a whole team in a food fight. By running. Admit it. Shes cooler then any of you.

Ruby isn’t as agile as she used to be, except in certain situations, and Blake no longer uses her sword as a whip she can control in mid air. It’s these minor details which always made a fight scene so unique. Also holy shit Adam was super fucking powerful in Blake’s trailer. What happened to his sheath being a gun, and him charging up slash attacks.
As much as I vibe with the 2D of the anime, Monty Oum is still the reason I find the fights in volume 1 and 2 my vibe. The choreography, the tempo, the music, everything just hits hard.

In my little opinion the small section 9:58 is the best of all of the series. The footwork, fakes, quick test jabs (kicks) till Melanie kicks too high and Yang uses that opportunity to beat her down. Monty you are sorely missed.
Seriously, Ren should try a different weapon that's more effective. Like daggers maybe? Nunchucks although Sun has that? He seems a lot better fighting barehanded than when using his blades that seem to do minimal damage anyways

I really like how in the first fight scene RWBY uses her ranged weapon every chance she gets, and uses melee when the enemy got too close. Then, whenever she gets/creates a pause or gets distance, she gets off as many safe shots as she can. That's pragmatic fighting right there.
issue is later down the series she chooses to use the gun version way too often, making her fight scenes either boring or legit just 5 seconds of her swinging her scythe and then done. It really is sad how little she gets to fight considering she is the poster child of the show.
I love how Roman is slightly caught off guard at 25:36 as he backs up. I love his character but he was bested at this moment by Sun. I looked closely at this scene and he clearly should have been shot here by the way the gun lines up with Roman. Roman's cane is slightly higher than the barrel of the gun and therefore wouldn't actually deflect this shot but I'll assume it's just a design mistake.

I wonder how ineffective guns are in this universe. People always dodge them, when they get "shot" they're fine (yes I get the aura thing, but that's still a little extreme) they almost never work on Grimm until it's convenient for them to do so... I'm so confused.

The story/writing has gotten better, to be fair, but I was never really interested in RWBY for the story in the first place. (Except for the end of season 3. Pyrhha's death was a brilliant moment in an otherwise mediocre story. They actually got me to feel things in my cold, jaded heart.)
The director and lead animator for the show, Monty Oum, died in February of 2015. Only a tidbit of fight he was working on made it into Vol. 3. After Vol. 3, the two animators Monty worked the most with, Shane Newville and Dylan Gu were fired. For Vol. 4, RWBY was completely without it's lead animators and director and using a new software program. In Vol. 5, one of the directors/writers, Kerry Shawcross decides he wanted more dramatic, cinematic Hollywood style fights which explains what we see there.
That's why RWBY changed so much.. it lost its primary animators other than Monty Oum.. this explains in greater detail as to why the fights are what they are.. Hollywood crap...

Elemental_Phoenix motion capture is for the non fight scenes, fight scenes are hand animated. That's why. Plus, volume 4 is smooth throughout it all
