Just to clarify...When cooking chicken, fire is usually of mesquite wood, a.k.a keawe (Kay-Ah-Vay) in 808....NUTTIN else! Traditional cooking technique is rotisserie...huli-huli meaning to turn over frequently. To facilitate quick/proper cooking, chicken is mounted on skewer/rotisserie rod, or if unable to, sandwiched between wire racks, similar to Flying Saucer sandwich maker. Next time, I plan to add 1/2 Cup of salt to the brine and double down on the sugar. I think I might add some ginger to it as well. The rub was great. I think that I need to play around with the hot pepper a bit to get it just right (I think that this is going to be different for everyone though). After reducing my sauce, I notice that the favor of the ginger had almost completely got cooked away. I plan to throw it in towards the midway point in cooking down the sauce. Not sure how it will fare, but we shall see. Good recipe, thanks for the post.
I my.... I combined this recipe with the Pineapple butt chicken recipe th-cam.com/video/fhPrAKfD--0/w-d-xo.html , try it you will love it! Just keep the chicken whole and trow it in the brine. For the second stage when the heat is cranked up I used a piece of aluminum foil to protect the bottom part of the pineapple. Not that you're going to use it after but I didn't want it to burn and maybe let the chicken tip over or something.

Never have I seen dry mustard, habanero pepper, honey as well as brown sugar, Worcestershire sauce or apple cider vinegar either. I’m curious as to where you got your “traditional recipe” from.

You can marinate overnight, but a marinade will not help the chicken retain moisture. Marinade will only add flavor (to an extent).

I brined it for about 18-20 hours. Maybe too long? And I did Pat it dry after I pulled it out. Not sure what went wrong. Your thoughts?
That's about how long I brine. I cup Kosher to 1 gallon water. I have seen it get too salty when I brine for 2 days.
