    This is our favorite steak. I actually had one tonight in the camper! I had never heard of it, but our local meat locker (Anoka, MN) carries it in their fresh case. They call it their "butter steak" in the display. It was so good, that I had to go back and ask what it really is, and that's when I learned that it was the teres major. Whenever I post a pic on Snap, my buddies always ask what the cut is and I tell them where they can find it. Great video as always brother.

    Please take this suggestion as an honest attempt to help from someone who has spent time in Japan, China, Hong Kong, Taiwan, and - you guessed it - Chinese restaurants in the US. You are holding the chopsticks in an unorthodox way.
    Break them in two. Use the flat part at one end to cut things and separate them, using both hands; they are used as "blunt knives" in the orient when eating.
    To pick things up, put one between your index finger and thumb, and rest it against the back of your thumb muscle; put the other between your middle finger and your ring finger and rest it against your knuckle, pinch that one between the sides of your ring and middle finger fingertips. Bring them together and tap them on the table so that their tips touch and are even. Keep the one between your thumb and index finger still, and move the other against it and whatever you are picking up.
    You can pick up just about anything this way, and have extremely fine control - even over a single rice grain. It's also not "illegal" to use one of the tapered points to stab a morsel and hold it in place with the other.
    I love your grill - really neat plate. Lots of control over temperature. It would be good to see how people cook this with an oven broiler, like I do, and sear it either before or after broiling - or both. Your southern accent gives you a 12 month broiling season, but up here in New England, there are times you can't see the grill under the snow. Gotta eat steak in the winter, too; ESPECIALLY in the winter. Thanks for the video.

    Love the video. Does covering the meat with butcher paper while you let it rest make the meat any more tender?

      Not really. I basically covered it up to keep the dang flies off of it. Appreciate you watching

    The link sells Teres major .050 .-075 for $ 29 my local butcher here in california sells for $8 lb. This is a fantastic steak

    After you sit rested for five minutes, it will gain at least 5 to 7° so you’re close to 125 which is medium rare.

    Those custom editions for your PK grill was awesome!! O and of course the steak was cooked to perfection as well lol. I never had that cut. Guess I gotta grab one of those bad babies from Porter road!!! Thanks Mojo team!

      I haven't used the pk in years. Got these in a few weeks ago and I've used it about every night. Also got a grate for the Weber. The steak was awesome. Very flavorful and tender. Appreciate you Mr Eric

      Had a lamb shoulder on the menu but had to go help a neighboring coop get their lights back on. Had this in the fridge. Thought I'd knock it out real quick so I could post today. Don't want y'all forgetting about me. It was a fine piece of meat.
