My theory of the endermen is that the were once ancient builders who were trapped in the end and were mutated by the chorus fruit in the end. This caused them to become endermen. The reason they attack you when you look at them is because when they look at you it is like looking at a cracked mirror. Reflecting a different, normal, and better person that in the endermen's minds, they failed to become and will never be like you. So they believe that you shouldn't deserve this life that they once had and they attack you.
