Low Net Carb Bamboo Fiber Chocolate Chip Cookies Recipe - Keto And Gluten Free

  • These wonderfully chewy keto chocolate chip cookies are made with bamboo flour, sugar free milk and white chocolate chips. The leftovers keep well for several days, and you can also successfully freeze them.

    Full Recipe
    60g bamboo baking flour (48g bamboo fiber and 12g powdered whole psyllium husk).
    1 tsp (2g) baking powder
    1/4 tsp pinch salt
    1/4 cup (45g) sweetener
    8 tbsp (110g) COLD unsalted butter
    1 large egg
    2 tsp (4g) vanilla extract
    40g coconut milk
    50g sugar free white chocolate chips
    50g sugar free milk chocolate chips
    Some chocolate chips for decoration
    Steps:
    Measure 60g of bamboo baking flour (48g of bamboo fiber and 12g of ground whole psyllium husk) in a food processor or in a chopper grinder.

    Add 1 tsp of baking powder and
    1/4 tsp of salt.
    Add 1/4 cup (45g) of sweetener (stevia erythritol).
    Pulse to combine.
    Add 8 tbsp (110g) of COLD unsalted butter.
    Cut/pulse until coarse crumbs form.
    In a separate bowl crack 1 large egg.
    Then add 40g of coconut milk (or any milk) and
    2 tsp of vanilla extract.
    Whisk them to combine.
    Measure 50g of sugar free white chocolate chips and 50g of sugar free milk chocolate chips.
    Add them to the liquid mixture.
    Fold everything together with a silicone spatula until it begins to come together.
    Shape the dough as desired or scoop dough and shape into balls.
    Place dough balls on the prepared baking sheet then
    flatten them slightly into disc shapes with your palms.
    Dot each cookie with a few extra chocolate chips for decoration.
    Bake the cookies in preheated oven at 360F for 21-23 minutes, or until the edges are just beginning to turn brown.
    Keep in mind that all ovens and pans are different, even if they look the same or very similar. The baking time in my recipes is as accurate as it can be, but it might take you more or less time.
    Let them cool for 5 minutes on the pan, then transfer to a rack to cool completely.
    The longer the cookies cool and dry in the air, the crispier they will be.

    I bought a bamboo fiber to make Victorias flour blend, but I am having high blood sugars.
    The brand I bought was Salud Vida. I do not know if it is the brand of bamboo fiber or the new sweetener I bought from Costco and Amazon (I blend several together...xylitol, monk fruit/erythritol, stevia blend).

      I have heard that xylitol can spike BS... it is also DEADLY for dogs & cats!
      If you have a continuous glucose monitor you can experiment with xylitol to see if it's the culprit (or even blood sugar strips). Take a fasted baseline, eat some xylitol, wait 30 minutes and check levels.
      Have you tried allulose? Although I must say, for something like cookies, erythritol is A+ for browning and crispness. Allulose in baking may over-brown and produces a much softer product.

      Victoria also uses Einkorn flour in her flour mix. According to amazon's bamboo fiber advertisements, bamboo flour is good for keto and does not raise blood sugar. However, Einkorn can, but not necessarily in a bad way from what I understand from Victoria's explanation.

      PS I avoid Xylitol. I mainly use monkfruit or allulose (with no other added ingredients - be sure to check the ingredients). I do use stevia for drinks though.

      @@terfalicious .... Xylitol was never something I ever bought while my sweet maltese was alive. Just bought it because it is supposed to not have a strong after taste....like erythritol does.

    I made these but used allulose sweetener instead. They where flat and chewy like a pancake. Could you make a version using allulose sweetener? I suck at baking with it lol

    Never used bamboo flour is it a gritty texture like almond flour when you bake with it?

      It’s actually light very soft . Pretty much like snow.

    With most recipes you seem to mix bamboo with husk any reason why ?
    I wanna try an alternative to almond flour as it does give recipes a taste of it. Shame bamboo flour is like double the price tho.

      Because bamboo fiber alone is not enough to make good baked goods. Bamboo fiber may cost twice as much as almond flour, but you need a third as much.

      @BambooLoveChannel ok so makes it more like all purpose flour. If only need third then what about other ingredients keep same. I use 100g of almond in cookie recipe so your sayin I only need 33g of bamboo/husk flour instead ?

      It is difficult to replace almond flour with bamboo fiber in a recipe because they work differently. They need different other ingredients in recipes to get good results. Bamboo fiber and psyllium husk are fibers with high water-binding capacity. (So 100 g of fiber can be used to bake about 500 g of bread, while 100 g of almond flour can make a bun)

      @BambooLoveChannel ah ok assumed could just replace like they say all purpose to almond etc. Seems its just experimenting tho in the end. As not many bamboo recipes I can find. Wanted to try my ginger protein cookies and brownie square piece using bamboo instead of almond.
