If you want some ideas, I got this challenge: Alchemy Only. You may wonder how it works. Basically, you can only use weapons/armor/magic/etc. if you drink potions that fortify those skills or schools of Magic. You can only enchant or Smith items if you brew potions that fortify those skills and stuff like that. There are some rules and stuff to go into detail if you wanted to try it out
