  • Want to do something totally irresponsible with your Kyocera ceramic petty knife? This video walks you through the sharpening process that we used to get our knife shave ready for the World's first SECOND ceramic knife head shave video (linked below). We used the Jende JIGS for Knives with 1x6 Jende Industries Diamond Films in 80, 60, 45, 30, 15, 9, 6, 3, 1, and 0.5 microns, and finished up with 1x6 Jende Nanocloth 0.5, 0.25, 0.1, and 0.025 micron strops loaded with our Jende Poly Diamond Stropping Emulsions.
Because there are no real indicators for sharpness on ceramics, you really need to just go through a process that ensures you are getting there on each grit. We used scrubbing and sweeping strokes to make the initial grit scratches, and then finished each grit level with a pyramid of sweeps - usually 25, 20, 15, 10, and 5, and then an increasing amount of 1 to 1 single sweeps to finish. On the Jende Nanocloth strops, we only used edge trailing strokes.

Watch out for that tip flex you noted. I was working on a kyocera, one of their top end innovation series, and snapped the tip right off quite easily.

Definitely watch out for flexing. Some brands flex more than others (don't ask me how I know). Kyocera probably has the most flex out of the ceramics I have sharpened. Thanks for watching!

Olá! Excelente vídeo. Gostaria de uma informação se for possível: onde comprar esse amolador e essas pedras com granulaçoes tão finas?
    Abraço.

If this is what I have to do to sharpen a ceramic knife then I will not be buying a ceramic knife.

This is an extreme example of what can be done with ceramic knives with the right technique and equipment and is actually not very ideal at all for regular use as the edge becomes evermore fragile when preparing it for shaving. Generally speaking, ceramic knives will cut well enough for most food applications at about 15-9 micron or 1K-2K grit and will be plenty sharp at the 6-3 micron or 4K-6K grit range.
