- INGREDIENTS
2.5 kg chicken boneless thighs
SPICE PASTE
8 red chilies
15 shallots
100g galangal/blue ginger
8 candlenuts
30g ginger
10 garlic cloves
4 stalks lemon grass
60g turmeric
2 big onions
4 tbsp chili powder
2 cups (440ml) water
1 cup (220ml) optional
TURMERIC GLUTINOUS RICE
4 rice cups glutinous rice (equivalent to 450 ml or 256g)
200 ml coconut milk
2 tsp turmeric powder
1 tsp salt
1 tsp white peppercorns
2 knotted pandan leaves
2 metric cups (440 ml) water
8 Kaffir lime leaves
3 turmeric leaves
3 stalks lemon grass
500ml coconut milk
6 tbsp (150g) kerisik /toasted grated coconut
3 tsp salt
1 tbsp tamarind paste
3 tbsp brown sugar
