Simple Pesto Pizza Delight

- Ingredients
For the Dough:
* 8g dry yeast
* 2 tsp sugar
* 300ml warm water
* 450g all-purpose flour
* 2 tsp salt
* 2 tbsp olive oil
For the Pizza:
* 2 tbsp softened butter
* Freshly made pesto sauce (amount to taste)
* Fresh tomato slices
* Fresh mozzarella cheese slices
* Salt, pepper, and fresh thyme to taste
* 1 tbsp olive oil
Instructions
Making the Dough:
1. Activate the Yeast: In a bowl, combine the dry yeast and sugar with the warm water. Mix well, cover, and let it sit for 10 minutes until it becomes frothy.
2. Prepare the Dough: sift the flour on the yeast mixture add salt and olive oil. Mix until a dough forms.
3. Knead the Dough: knead for about 10 minutes until the dough is smooth and elastic.
4. First Rise: cover it with a cloth, and let it rise in a warm place for about an hour, or until it has doubled in size.
5. Divide and Rest: After the dough has risen, cut it into two equal pieces. Let them sit for 15-20 minutes to relax the gluten.
Preparing the Pizza:
1. Shape the Dough: Take one piece of the dough and roll it out into a square shape on a floured surface.
2. Butter and Fold: Spread 2 tbsp of softened butter over the dough and fold it into a smaller square.
3. Final Shaping: On a piece of parchment paper, gently shape the small square into a larger square to fit your desired pizza size.
4. Add Toppings: Spread the freshly made pesto sauce evenly over the dough. Arrange the tomato slices and mozzarella cheese slices on top. Sprinkle with salt, pepper, and fresh thyme. Drizzle 1 tbsp of olive oil over the toppings.
5. Bake the Pizza: Preheat your oven to 375°F (190°C). Transfer the pizza with the parchment paper to a baking sheet or pizza stone. Bake for 20-25 minutes, or until the crust is golden and the cheese is bubbly and slightly browned.
