    Long ago in San Blas, Mexico, I would sit in the back yard and watch the two little children next door endlessly cracking coconuts that fell from the trees when tiny for the bite of dried meat inside. At least I think that’s what they were. The house was surrounded by coconut palms and when I said ‘cocos?’ They said ‘Si.’
    And there were little stands where for a peso or so a man would whack the top from a green/ young coconut (in the husk like yours) - for the delicious jelly inside. Lucky when you live where coconut trees abound.

    I shred my coconut before blending, I find that it makes blending easier. Just my opinion.

      To make coconut powder, you'll need a dehydrator. Simply dehydrate coconut milk or cream until it’s fully dried, then blitz it in a blender until it turns into a fine powder. Store in an airtight container, and you're good to go!
